TRADITIONAL CHILI

Last night my daughter’s and I kick started the summer fun. Chili and chili dogs, salt and pepper potato chips, pickles and brownie sundaes for dessert. We and some friends over and loaded up a B rated horror film from the late 80’s. Waxworks l, and Waxworks ll are a must see for anyone with a slightly sick sense of humor. Not at all scary, but, I did hear Jay scream once like a little girl, or was that Sean. Thank heavens the girls were here to protect them!
THE CHILI:
This is the easiest dump recipe you can ever make, just brown the meat, saute the onions and garlic and oil up the can opener. Tasty and quick to do for a crowd. Cook it a day ahead and it gets better!
- 1 large onion chopped
- 2 cloves garlic
- 3 T olive oil
- 2 lbs meat 1/2 inch cubed or 1 lb lean beef + 1lb ground pork or ground turkey (mix up your favorite meats to create your own flavor style)
- 1 4 oz. can green chilies diced
- 1 10 oz can of beef consomme
- 2 T tomato paste
- 2 cans tomatoes diced
- 2 T Worcestershire sauce
- 1 T Dijon mustard
- 1 t dried oregano
- 2 T ground cumin
- 2T chili powder
- 1-2 T bbq sauce
- 2 cans red kidney beans or chili bean or black beans ( again, mix them up or add your own favorite beans)
Options:
- saute some bacon before the onions and use the fat and bacon in the chili
- fresh corn cut off the cob gives a nice texture to the chili
- 1 t smoked paprika adds a nice depth to the flavor
- serve with lots of sour cream, diced green onions, chopped black olives and grated extra sharp cheese
- use leftovers for chili dogs
Method:
- In a large dutch oven brown the beef, remove and set aside for a moment. Saute onions until golden in the same pan, add garlic.
- Combine the onion mixture and meat together in the same pan.
- Stir in chilies with their juice, consomme, tomato product,mustard, Worcestershire sauce,BBQ sauce, herbs and cumin and chili powder. Simmer until the meat is tender, this could take a few hours depending on the cut of meat used. Add more consomme or water (or beer) if needed. When the meat is tender, add the beans, partially drained (depending on the viscosity of the stew) Heat through and serve w/ traditional garnish.

Apparently if your baked, the movie is better and so is the chili.
